Ingredients:
- 4 oz GADRE Snow Crab Leg
- 1 cup olive oil
- 2 tablespoons red wine vinegar
- 1 bunch of fresh parsley
- 4 garlic cloves
- 2 Red Bell peppers
- 3/4 teaspoon dried oregano
- ¾ teaspoon thyme
- Salt to taste
- Pepper to taste
- Red Potatoes
- Small Tomatoes
Preperation / Cooking:
- Preheat your oven at 350 degrees F. Proceed to dice the red potatoes. Put parchment paper on an oven-safe tray and place the diced potatoes on it. Pour some olive oil and salt on top of the potatoes and put into the oven until golden brown.
- Finely chop or mince the parsley, garlic cloves and bell peppers.
- Mix all the ingredients together in a bowl except for the tomatoes and GADRE Snow Crab Leg. Let it sit for at least 10 minutes so all of the flavor’s fusion into the oil. The longer your Chimichurri sits the more flavor it’ll have. Chimichurri can be prepared in advance and kept refrigerated.
- On a serving plate, place your baked potatoes and top them with half cut tomatoes.
- Place your GADRE Snow Crab Leg on top of the potato bedding and pour chimichurri on top of the crab. Enjoy!
